Quick Healthy Breakfast

Ingredients:
Kale (or Spinach)
2 Eggs
1/4 cup of Milk
Salt and Pepper (optional)
Turkey Sausage
Pita Bread or Whole Wheat Bread
This is what I (and my baby) eat almost every day! and I’ll never get tired of it!! It’s super easy that there’s no way you can not make this and prefer this over unhealthy breakfast!
First of all, I want to introduce to you all, the reason why eating healthy has become super easy to me! It’s because of this food processor chopper! Seriously! I bought this for $10 and it’s helped me a lot to eat healthier, why? Easy, I just chop spinach, kale or broccoli and mix it with whatever! I’ve made so many food that my Husband didn’t even notice he’s eating something healthy - it’s because they’re tasteless and since I can chop them into tiny little pieces, you can barely feel that you’re eating kale! I mix them with almost everything, pasta sauce, burger patties, meatballs, soup and any other sauce I make. Seriously, you should get this if you see them in your local stores! You can chop a lot of things in just seconds! Onions, garlic, almonds, walnuts, I even chop bananas here when I make banana muffins! However, if you don’t have this, of course you can chop them with knife into tiny little pieces. What’s important is that you added something healthy in your meal!
In America, almost every household use nonstick pans, while in the Philippines we use regular pan like this:

Kawaii, a Filipino wok - and this pan will stick and ruin whatever you make, this is why most people fry with so much oil in it so it doesn’t stick! People of the Philippines, I really recommend you guys start using nonstick pans because then you can use small amount of oil, or spray oil and even stir fry with olive oil with no problem! I am telling you this, IT REALLY MAKES A DIFFERENCE!

Back to the recipe, this is gonna be quick! I just heat up the pan to medium-high heat, spray some canola oil, while doing this, I start chopping kale in about 5 seconds (yes, that quick!) then crack the eggs to the pan and start stirring ’til the yolk and white mix up, then add the milk and kale. I just keep stirring until it hardens a little bit. You can add salt and pepper if you want.


After making eggs, i just slice a few turkey sausage and just put it in there, spraying a little bit more of oil and just cook it, and voila! I have a healthy breakfastI prefer turkey sausage for the obvious reasons that turkey is leaner and has significantly lower number of calories and grams of fat. I usually eat it with pita bread or whole wheat bread that’s reheated in the toaster oven.
